[Bug]: File permission issue when using other users than 1000 or root

What happened?

Issue:

I wanted to switch from root deployment to user deployment. During that I ran into several pitfalls.
My current user has gid/uid 1004. This is what I entered in the .env.
Many things did not work out well, but I think now I got it.

1. all mkdirs by docker compose are still owned by root. I don't know why. That might also be an issue from my side. manual Fix: chown -R to 1004:1004.
2. I tried uploading a file which lead to a permission issue again. /app in the lc container is owned by node (inherited from the Dockerfile creation process). now of course 1004 cannot write into /app owned by 1000.

Suggestions:

Make the node:1000 user work consistently:

1. Document that the only out-of the box working user is 1000 (caused by the dockerfile)
2. add chown -R 1000:1000 for ./data-node ./images ./logs ./meilidata_v1.7`

Alternative: Enable other users than 1000 to own the container:

1. add chown -R $UID:GID for ./data-node ./images ./logs ./meilidata_v1.7`

Steps to Reproduce

1. docker compose up with user 1000

I've run into this same exact problem just now... had a user librechat (UID: 1002)... and was getting a bunch of permissions denied errors on docker compose up. Looking at the directories in the git repo (after the initial docker pull) there are a handful of directories that are owned by root:root.

data-node, images, logs, meili_data_v1.7.

I had this set in my .env file, fwiw:

UID=1002
GID=1002
