Updated PR to use --network chiado

If we decide to make this package production ready, we can just close this PR and do a full refactor in another PR.

Just noticed, we can probably also remove --genesisStateFile and --bootnodes.

Same update also needs to be applied to validator/entrypoint.sh

AFAIK there is no plan to publish this pkg, it was mainly created for testing purposes.

but considering this package is broken in many differente places let's merge this as is
