Describe the bug
The demo images on docker hub are no longer accessible, due to name change from 'datakind/' to 'datakindorg/'. This will be reverted at some point, but for now we will update demo scripts.

To Reproduce
Steps to reproduce the behavior:

  1. Follow README instructions for quick start, the process will fail

Expected behavior
Demo should deploy with no errors
