[WIP, don't merge yet] Started work to bring dbt schema up-to-date with recent additions.

sorted models alphabetically
added is_lowercase_address tests
added description to tables/columns where appropriate

TODO:

write description for every dataset
write description for all columns where meaning is not-obvious (e.g. anchor_address)
create generic is_ipfs_cid test


          Update dbt schema.

Merging this now (doing some changes that I'm not sure if they'll affect the PR)! Will create an issue for the TODO tasks.
