Update the demo to Camel 4 for Quarkus

When I updated Quarkus 3.5.0 to use Camel 4, it showed the dependency "camel-quarkus-atlasmap" missing. I have investigated and I found out that this dependency was removed in Camel 4: https://camel.apache.org/components/4.0.x/index.html#_components

We still can use this dependency with version 2.16.0, but I think that maybe we should use an alternative.

@JuanmaBM we need to move from AtlasMap to JSLT and we'll lost the visual tool for mapping fields.
