This PR adds the ability for a connector to override some default behavior based on connector semantics, such as with Oracle all fields are always upper-case whereas for others the case is lower by default.
In addition, I also took the liberty to unify the tests for the Outbox EventRouter by creating an abstract implementation and having PostgreSQL and Oracle extend. This follows the same goals as was done with Incremental Snapshots.
