Docker: vim

Is your feature request related to a problem? Please describe.
I run k9s as a docker container, currently using the official image ("latest" specifically). As editor, I would like to use vim, not vi, but I would prefer not having to create my own custom image merely to add vim.

Petition / question if you'd be willing to include vim in the official image.

Describe alternatives you've considered
I can create my own custom image, but I'd have to setup a whole flow to automatically trigger and build after a new official release has been made.
