This is a companion PR to desihub/redrock#198, to rename redrock output from "zbest" to "redrock" and use the updated rrdesi option names.
This is a merge into the coadd_fibermap branch which is collecting the file and HDU reorganization for final everest redshifts, so I plan to self-merge soon and then keep testing on that branch.
