SM:

take care not
to cause an inadvertent denial-of-service attack on the NTS-KE
server, for example by picking a random time in the week preceding
certificate expiry to perform the new handshake.

This order makes it sound like the example is about the attack, not the
way to "take care not to cause".

I remember that we had a detailed discussion on this topic. For me
the current language this still sound sensible. Any other suggestions?

I too think it is sensible. Since we have no better suggestion, I suggest we leave it as it is.
