Upgrades most server dependencies to the latest version.
The new version of joi is published under a new organisation (@sideway/joi) as well as the @hapi/hapi v20 released under new stewardship hapijs/hapi#4138.
Most of the file changs are due to these import changes. But there was also some changes needed for eg.
uuid.
