simplify build and install options for Ghostscript

• I've not hit the 'too much parallelism' race condition, so we should try removing it (and I was the one to add it after a build failure in {vis}[GCCcore/10.3.0] Ghostscript v9.54.0, ImageMagick v7.0.11-14, LittleCMS v2.12 #13027)
• There are extra options in the ConfigureMake easyblock that allow simplification of the options
