Chore - Upgrade Java to version 17 in SCXA

We are using a very outdated Java version: 11. It is an LTS version (Long-term support).
The next LTS versions are: 17 and 21.

Let's jump for now to version 17. That hopefully has less issues then directly jump to version 21.
Later we can create another ticket and jump further to version 21.
