Consider edc names plato / sokrates #24

Currently the name of the EDC instances of e2e-testing umbrella chart are named edcconsumer and edcprovider:

Maybe this should be changed to match the two example names from tractusx-edc itself with plato and sokrates?

Any suggestions / ideas?
