Motivation/summary

Run check-docker-compose for all the active branches in the APM Server (main, 7.17 and 8.12 now)

See this build that ran this PR to validate it works as expected

Checklist

For functional changes, consider:

  • Is it observable through the addition of either logging or metrics?
  • Is its use being published in telemetry to enable product improvement?
  • Have system tests been added to avoid regression?
