This works with 7.17.5 ...but NOT with older versions. Doing some checking in the meanwhile in another branch
Replace elasticsearch7 with elasticsearch8 Also update Curator version and ES version restrictions
This might be better backported to the 7 and 6 branches anyway, due to the smaller containers and all that.

Successfully tested with Python 3.10
Update reflecting support of Python 3.11 Also block docker_test/repo from being tracked
