doc: update oidc docs #3275

This PR updates odic docs:

splits the task into two sub-tasks: OIDC Authentication for a specific HTTPRoute and OIDC Authentication for a Gateway
adds https setup to the Prerequisites section since browsers don't allow secure cookies for HTTP connections
