This'll require patching Nordic's libraries (ble_nus.c) but there should be an option in NRF.setServices or NRF.setSecurity to make the UART connection require bonding.

Right now it doesn't, so for instance even if you enable PIN code pairing in NRF.setSecurity you can still use the UART while unpaired.
