This allows for use of the Statistic and Statistics Graph cards in HA. You can then create cards that show for example, the highest PM2.5 value in the last month, the lowest temperature in the past week, etc...
state_class is defined for each sensor component that you would like to HA record statistics data for (ESPHome Docs)
