This PR includes some isolated local updates matching dependabot alerts that we've seen, but also followed by a full update to all recent minor versions of our dependencies. This should pre-empty any immediate further dependabot alerts and bring us up to date.
This has been tested locally - automation,
yarn developenvironments and with the examples from the docs.
