ncurses dep will be not required anymore

Motivation

As soon as #1552 gets merged we don't need any more ncurses.

Feature

Remove that dependency across the project.

N.B.
We cannot remove it before #1552 has been merged, because ncurses is also included in the falco-builder images and CI jobs fail if it's not present.
I wrote this issue mainly as a reminder, so we can clean it up later.
