Add mkdocs documentation

TODO:

• Init mkdocs documentation
• Add base documentation contents
• Add usage documentation contents
• Add deployment documentation contents
• Add workflow for building and deploying doc to GH pages

Still to figureout:

• automate version in documentation index.md
• How to store different versions of the documentation. Might be useful: https://github.com/koumoul-dev/gh-pages-multi
