Motivation
Updated SDK to use the new version of the client library for sign API v2
Test Plan
I added new tests in FiskalyAPITestsV2.swift to test the v2 process up to the point of finishing a transaction. This requires the
V2_API_KEYandV2_API_SECRETenvironment variables to be set.
