Suitable for E-Ink displays
Based on the default high contrast theme (invert colors and add small changes)

Install

Install User Themes
Download E-Ink.zip from Releases
Extract it and copy gnome-shell.css under '~/.themes/E-Ink/'
Change theme from User Themes settings
