Add testing of production builds to CI

Apparently, we do not current test production builds in CI. Recently we ran into an issue where our local CI passed but the builds that are published (and used by Glimmer.js/Ember.js) were completely broken (see #1162 for an explanation). If we had had tests for our published / production builds, we would have been able to catch this before merging.
