The documentation doesn't seem to reflect the minimum Rust version requirements. Or am I missing something?

No you are correct. You can consider the stable rustc version when you the last gtk-rs release occurred to be the lastest supported version. However, we should make it more official...

The CI is now running with the minimum supported Rust version, at this point 1.40. @GuillaumeGomez do we have that somewhere in the docs too or on the website?
