OST is just a local cache. This means it only contains partial data and is just a temporary copy of
emails residing somewhere else. OST is used for Exchange and IMAP accounts. This means the full data is stored on the server side and backup is usually done on server side. If your client crashes, all emails will still be available on the server.
If you want to have a local copy, you can use POP-account of your email provider.
Another possibility is to use the archive function within outlook and copy the archived emails to a PST file.
There are also 3rd party tools to convert ost to pst.
