Now that the snappshotter and the CRI plug-ins are disabled we don't need to configure or disable them via configuration anymore. Drop the unnecessary configs.

This updates Buildroot to remove the unnecessary plug-ins from containerd. With this the containerd binary is about 14MB smaller.
