Node 8.7.2 release and process compose

Overview:

Bumps all cardano-node and cardano-cli related packages to reflect the 8.7.2 release for all environments.
Introduces a process-compose flakeModule pattern for future local workload process composition.

Details:

• Bumps capkgs for cardano-node 8.7.2 and master process-compose with a fixed nix build
• Bumps iohk-nix and iohk-nix-ng for cardano-node 8.7.2 compatible configuration for all environments
• Bumps all relevant cardano-node and cli packages in the pkgs flakeModule
• Adds a new exportable flakeModule: process-compose, which will be developed further in future PRs
• Removes special handling of mainnet in the cardano-node-group profile now that mainnet is p2p by default
• Updates the gen-env-config nix job to have a playground compatible shelley-qa naming syntax
• Template: Fixes ssh-list-[names|ips] recipe breakage when nixosCfg state mismatches TF state
