Documentation directory unorganized and confusing #15

Currently the documentation directory is very unorganized. It's hard to find at a glance what I need to find. I'd suggest creating an overview document and organizing things into directories.

It fails to build with this error message:
Error: can't write /gadget/pkg/gadgets/opensnoop/tracer/core/opensnoop_bpfel.go: can't generate types: template: common:19:4: executing "common" at <$.TypeDeclaration>: error calling TypeDeclaration: struct#13["args_t"]: field 0: type pointer#14[target=#15]: not supported
