Howto: Backup Docker volumes

To have your mailserver data backed up, its enough to copy the volumes data-db, data-mail and optionally data-redis (to keep spam/ham training data) to a secure location.

There are already many solutions to do so, that's why this guide doesn't cover strategies for this.
