I have been using Phantom running on a Raspberry Pi for a few weeks to connect to a friend's remote server with Minecraft clients running on iPads and XBox. However, since a Minecraft update this week, both iPad and XBox clients are no longer able to connect. I have one iPad with a client that has not been updated, and that is able to connect as expected, so it suggests that both Phantom and the remote server are running and working.
I can see ping and pongs to and from Phantom for all the clients. No error messages are showing in Phantom.
The updated iPad has the remote server saved as an additional server. However that shows the message "Locating server" in the server list. The current ping shows as red and if I try to connect it shows as "Unable to connect to world."
Clients & versions:
XBox - Minecraft Bedrock Edition v. 1.16.210 - Not connecting
iPad - Minecraft v. 1.16.210 - Not connecting
iPad - Minecraft v. 1.16.201 - Connecting and working well
I have been told that the remote server has been updated, but I do not know the version number currently running.
Any assistance would be greatly appreciated.

The fact that 1.16.210 clients are not connecting but the 1.16.201 client is, suggests to me that the server has not been updated to 1.16.210 and is in fact still running 1.16.201. I say this because the 210 update is a breaking update unlike most of the early 1.16 updates, if the client hasn't been updated it won't be able to connect and vice versa if the server hasn't been updated but the client has.
There was a solid 24-48 hour delay between the client update being released by Mojang and the private server update being released with the latest patch so there is a good chance that this is part of what is causing confusion.
Hey @nickking11, like azariah001 mentioned, the server was likely outdated based on the clients/versions and behavior you listed. Thus far, phantom doesn't need to be updated when new versions of Minecraft are released. As long as the server is updated, phantom will work.
