fix GatewayClassStatus default value

Fixes #470

Maybe it would be better to remove one of the default values but I keep both to be homogeneous with other objects.
Update documentation accordingly.

I'm waiting for a kubernetes-sigs member to verify that this patch is reasonable to test. If it is, they should reply with /ok-to-test on its own line. Until that is done, I will not automatically test new commits in this PR, but the usual testing commands by org members will still work. Regular contributors should join the org to skip this step.

Once the patch is verified, the new status will be reflected by the ok-to-test label.

Thanks for this PR! This generally LGTM, but I'm a bit concerned about the huge diff in the generated docs/spec page. Did anything go wrong when running make generate? I thought our CI should catch a regression like this but that doesn't seem to be working.
