Update readme.md (#1924)

- add an `alt` attribute to our logo for accessibility
- grammar fix for "and" to "or"
- remove the PHP version, which makes it more generic so we don't have to update it all the time
- add closing pipes on the markdown table for better compatibility
- update the information in the version table to match our recent changes
