Homestead minimum PHP version should be ^8.1 but less than 8.3. There's a lot of code review to do in src/ to ensure 8.3 readiness.
Drop version 5 of Symfony components so we can upgrade past PHP 7.x
Add Symfony components version 7 (thanks @ALameLlama)
