chore: setup Sentry middleware in indexer

• the postgres adapter we are using is not supported by Sentry, otherwise we could get query performance traces as well (https://docs.sentry.io/platforms/node/performance/database/?original_referrer=https%3A%2F%2Fwww.google.com%2F)
• will need to update k8s deployment with SENTRY_DSN env var
