Would be nice to minimize footprint by having the option to hide the dock icon. The menu bar icon would still be visible.

I think you should ditch the menubar and the Dock icon altogether by setting LSUIElement to true in the App's Info.plist. The settings window then should only appear on launch if the preferences have never been set; after that, subsequent launches should only add the menu bar item.
