I installed the extension under GNOME 3.36 on Mobian (Debian), it is enabled and I was able to modify the height etc, however I am not seeing any additional keys or way to change the keyboard layout. I also didn't see anything here explaining the process.

Sorry for the late reply.

Your keyboard should look the one on the Screenshot in the Readme. if it doesn't check gnome looking glass for any extension errors.

changing layout is currently unsupported.

Turns out this extension doesn't seem to work well on smaller screens and Wayland... This other extension seems to have good settings to tweak the aspect ration of the buttons themselves and would be a very good addition to your extension I think: https://github.com/jlempen/gnome-shell-osk-tweaks
