Update example react-native version

The react native of the example version is under 0.70 which means all of your changes are working properly because the example version uses the legacy architecture. On the new architecture, specifically on Android the react-native-config doesn't pass the environment to the JSI and the JavaScript side gets {} by calling import Config from 'react-native-config.
