As of recently, Mapnik can be built from scratch along with all its dependencies using Spack HPC package manager as shown below. I thought you might want to list it under build methods for Linux and MacOS.

$ git clone https://github.com/spack/spack.git
$ cd spack/bin
$ ./spack install mapnik
