Use container images in documentation

After masa-finance/masa-oracle#396 - we want to update now our docs to use the container images rather then providing instructions on how to build the oracle manually.

Action items

• update the documentation instructions by using the container images
• container images mentioned in the docs should be using tags
• the tags should be automatically kept up-to-date in the documentation with a GH CI pipeline which fires automatically after we release
