Fix Flaky History Test

Description

The test GivenTestResourcesWithUpdatesAndDeletes_WhenGettingResourceHistoryCount_TheServerShouldReturnCorrectCount is behaving flakily and blocking PRs from executing for others devs. Changing the way it finds history for more reliability.
