InkCanvas not working on WinUi 2.7

Describe the bug

With a pen or a mouse inking on the InkCanvas not working anymore.

Steps to reproduce the bug

It's easy to reproduce the bug.

You can just download a default example like on Windows Template Studio with InkDraw option and test it on the default 2.5 version: it will work. Then update the packages to 2.7: it's may not work. Even on Xaml Control Gallery which look like to have the 2.7 version it's not inking.

Maybe it's because of my recent update to optional cumulative preview for Windows 10 Version 21H1 for x64 or just something is not support from my hardware's on 2.7 version. But it's not seem common among others developers using the latest WinUI framework with usual InkCanvas.

Expected behavior

Ink strokes should be draw on the InkCanvas.

@mixturify, you're not alone with this issue. I too have had the same problem with the inkCanvas not working for some users, but working fine from others, and have found that it functions fine in WinUI 2.5, but is broken in WinUI 2.6/2.7 . I'd really appreciate (and my customers would too!) it if someone took a look at this case.

Look like with the workaround from the comment #5299 (comment) the InkCanvas work again.
Well, what was a tricky issue!
