Updated site xsd / added skin

Updated xsd - using project.name & added skin version.

Hi Jeremy. Note that the skin version is already in the parent. Have a look at the parent project (src/site/site.xml). We should not duplicate that in the children projects.

Ah...didn't realize inheritance worked that way. I had ran an early test and it had worked but I was clueless as to why. I thought this might be the case but wasn't sure. Ill fix this. Thanks.
