Allow days to keep logs to be defined via env.php, keep 3 as the default.

Hi, there are an example to edit log days in env.php? I have the previous env.php and can't figure how to edit it.
Or continue to do so in logging.php

It is nothing different from other env.php items and displayed/highlighted in changed files section of this pr.

Use LOG_DAYS in your env.php
