The current README.md is too long for the automated DockerHub description update using
peter-evans/dockerhub-description@v3(the description gets truncated on DockerHub).This PR split the docs into a minimal root README.md for DockerHub and the rest of the advanced documentation in
./docs/, similar to the acme-companion repo.It also clarify my stance on the
latesttag and its friendalpine.
