Updates IssuerOrg to Issuer Profile

I'm proposing a change to better account for non-organizational (i.e. individual) issuer entities.

I propose that we change the name of the IssuerOrganization data class to Issuer Profile. The linked data IRI https://w3id.org/openbadges/#Issuer should stay the same. Corrects one error in documentation between docs and core context file.

Benefits:

• More explicitly support the fact that individual people may be issuers of Open Badges

Drawbacks:

• None known.

• Need to make additional adjustments to the Issuer Profile section to clarify language in the table's description field for the following properties: email, url, name, description. Any instance of "organization" in this table should be clarified to wording like "entity or organization"

I think I got all the modifications Kerri proposed, and corrected a couple miscapitalizations of IRIs for a few property identifiers defined in the context

Otherwise, we'll continue discussion a little longer to see if we can build to consensus. This is a very minor change and has seen no opposition so far.
