Motivation for this change
Unicode characters in filenames remain a pain for cross-platform work. I use my org-roam database under both Linux and macOS (on a dual-boot machine), and that creates trouble because Linux and macOS use different Unicode normalization conventions in filenames. So... it's easiest just to remove all nonspacing marks, which solves the problem for most European languages.
