Purpose

Updated the ScalaTest library dependency to 3.1.0

What does this PR do?
It updates the ScalaMock to work with latest ScalaTest dependency 3.1.0

Why did you take this approach?
So that we can leverage ScalaMock with latest ScalaTest released version
