Use custom overrides for contract calls

Instead of supporting all the ethers contract call overrides (e.g. blockTag) support a custom list of overrides and alias them to the ethers equivalent behind the scenes.

Specifically, blockTag should be renamed to blockNumber and only support a number instead of e.g. latest, negative numbers, etc.
