I updated icon path in file ~/.local/share/applications/postman.desktop to:
Icon=/opt/Postman/app/resources/app/assets/icon.png

First I removed file, then created again with:

[Desktop Entry]
Encoding=UTF-8
Name=Postman
Exec=postman
Icon=/opt/Postman/app/resources/app/assets/icon.png
Terminal=false
Type=Application
Categories=Development;

It worked for me.

In order to support Linux auto update, we changed our directory structure which cascaded this effect.
I would recommend to replace Icon=/PATH_TO_POSTMAN/Postman/app/resources/app/assets/icon.png with Icon=/PATH_TO_POSTMAN/Postman/resources/app/assets/icon.png in the desktop file as @Ludim suggested.

I see this issue in v7.10.0 (snap)

Got same error while installed using snap.
After that, I have cleared the broken packages and icons installed previously without using snap.
Its worked for me
